Good way to use up old milk.

Ingredients:

  • 10 cups whole milk
  • 5/8 tsp salt
  • 3.75 tbsp vinegar

Process:

  1. Heat milk and salt to 185F, stirring occasionally
  2. Remove from heat
  3. Add vinegar, stir 2 minutes
  4. Let rest, covered, 20 minutes
  5. Strain, drain, 5-20 minutes

Yield:

  • 15oz Ricotta Cheese (enough for a lasagna)
  • 8 cups of whey (good for breads and pastas)
