Good way to use up old milk.
Ingredients:
- 10 cups whole milk
- 5/8 tsp salt
- 3.75 tbsp vinegar
Process:
- Heat milk and salt to 185F, stirring occasionally
- Remove from heat
- Add vinegar, stir 2 minutes
- Let rest, covered, 20 minutes
- Strain, drain, 5-20 minutes
Yield:
- 15oz Ricotta Cheese (enough for a lasagna)
- 8 cups of whey (good for breads and pastas)
