Simple recipe for soy sauce eggs, suitable for a soup topping. This recipe will prepare a dozen soft-boiled eggs in a mason jar.
Ingredients
- 12 cold eggs
- 1/4 cup soy sauce
- 1/4 cup vinegar
- 1/4 cup water
- 1 tbsp sugar
- Optional:
- Garlic
- Ginger
- Chili
- Ice water
Process
- Bring water in a pot (at least 5qt) to a boil.
- Gently lower in eggs, boil for 6.5-7 minutes.
- Mix other ingredients (in a mason jar)
- Shock eggs in ice water, allow to cool.
- Peel eggs, place into container with marinade mix, seal.
- Peak flavor after two days.
